WHAT IS BABI GULING?
Babi Guling is one of Bali’s iconic dishes: pork, crackling, rice, lawar, sambal and accompaniments brought together as one complete plate.
The pleasure is not one flavour repeated. It is the movement between them — rich pork, crisp skin, spice, greens, coconut, rice and heat. One bite changes the next.
Meet Babi Guling 3.0
WHAT MAKES 3.0 KKO KKO?
Wood smoke. Deeper Balinese spice. More deliberate movement between richness, crackle, sambal, greens and rice.
Nine elements, but one idea: every component should make the next bite taste different.
WHY SO MANY ELEMENTS?
The pork gets your attention. Everything around it changes how the next bite feels.
Wood-smoked pork belly and house-made sausage bring depth and richness.
Crisp pork skin gives the plate its sharpest texture and the sound everyone waits for.
Smoked coconut lawar and cassava leaf shift the plate away from richness.
Balinese sambal, aromatic rice and spice pull the elements back together.
HOW TO EAT IT
Do not worry about eating every element separately. Move around the plate and change the balance as you go.
That is where Babi Guling becomes more interesting than simply pork and crackling.
Taste the smoke, richness and Balinese spice first.
Now the same bite changes through texture.
Heat and sharpness wake everything up.
They reset the richness before you build the next bite.
Then start again differently.
THE SENSORY MOMENT
After that, the plate keeps moving — sambal, coconut, greens, rice, spice. The next bite should not feel exactly like the last.
WHY THIS DISH MATTERS
Babi Guling has long held a place in Balinese ceremonies, celebrations and communal gatherings.
That context matters to us. We are not trying to reduce it to “crispy pork.” The crackling may be the first thing you notice, but the complete plate — spice, rice, lawar, sambal, vegetables and pork — is what gives the dish its identity.
Maybe this brings back Bali. Maybe you simply love crackling pork. Maybe you have never tried Babi Guling at all. Start with the plate.
